The outer structure remains in powder-coated electro-galvanised steel sheet, with cast-iron doors and burn-proof handles — a guarantee of robustness and safety.

The real innovation is digital management: the analogue thermometer and timer make way for a modern, intuitive display from which you can monitor the temperature, set cooking times and activate the internal light and fan, which features three speeds designed to suit different oven sizes.

The display also features two jack inputs designed to connect probes for monitoring food temperatures during cooking. A revolution that makes the experience even simpler, more precise and more professional. Inside, the CLEVER ventilation system allows cooking on five different levels, with uniform and flawless results.

Clever: an innovative ventilation system

Clever is a completely redesigned ventilation system that reaches 250° in 25 minutes (*) using only 1.5 kg of wood, addressing energy-saving and efficiency needs head-on.

The fan, positioned on the rear wall of the oven, draws out the steam produced by food, eliminating any moisture from the cooking chamber. At the same time, the heat coming directly from the combustion chamber to the base of the cooking chamber follows a forced rotary path thanks to the force exerted by the fan.

This pushes the heat from the rear of the oven to the front, where it vents through small holes positioned at the front: this not only enables perfectly even cooking but also prevents a sudden release of heat when the oven is opened, creating an air barrier.
