Clever: an innovative ventilation system

Clever is a completely redesigned ventilation system that reaches 250 °C in 25 minutes (*) using only 1.5 kg of wood, delivering both energy savings and efficiency.

The fan, positioned in the rear wall of the oven, draws out the vapours produced by the food, removing all humidity from the cooking chamber. At the same time, the heat that flows directly from the combustion chamber to the base of the cooking chamber is forced into a rotating path by the fan.

The fan pushes the heat from the rear of the oven towards the front, where it is then vented through small openings at the front: this not only ensures perfectly even cooking, but also prevents sudden heat loss when the oven is opened, creating an air barrier.

*Temperature and timings refer to an oven measuring 45×80.
